To make dashi, you will need:
Ingredients:
– 4 cups water
– 1 piece of kombu (dried kelp), about 6 inches long
– 1/2 cup loosely packed bonito flakes
Instructions:
1. Soak the kombu in 4 cups of water for at least 30 minutes or overnight.
2. Place the pot on the stove and start heating the water on medium heat.
3. As soon as you start seeing bubbles forming around the edges of the pot, remove the kombu.
4. Add the bonito flakes and bring the water to a boil.
5. Reduce the heat to low and let the mixture simmer for about 10 minutes.
6. Strain the dashi through a fine sieve or cheesecloth to remove the bonito flakes, and discard the flakes.
